Why 1 Cup Isn't Always the Same Weight
A cup measures space. Grams measure weight. Those are two different things, so the answer changes for every ingredient.
A cup is a fixed size
No matter what you put in it, one cup always holds the same amount of space — about 237 milliliters.
But not the same weight
Flour is light and full of air, so a cup of it is light. Honey is thick and heavy, so a cup of it weighs much more.
So we use density
Every ingredient has its own "grams per cup" number. Divide your grams by that number and you get cups.

Frequently Asked Questions
100 grams of all-purpose flour is about 0.83 cups. This is based on 120 grams per cup, the standard King Arthur Baking uses when flour is spooned into the cup and leveled off.
Grams measure weight and cups measure volume. Every ingredient packs into a cup differently, so the same weight fills a different amount of space depending on what you are measuring.
No. That number only works for water and a few similar liquids. Flour is 120 grams per cup, sugar is close to 198 grams, and honey is around 340 grams. Always check the ingredient first.
You do not need one, but it helps a lot. A scale removes guesswork, and most good ones cost less than a takeaway meal. If you bake often, it is worth having.
Our numbers are checked against King Arthur Baking's published ingredient weight chart and USDA food data, so you can trust the results in your own baking.
